Zucchini Fries

This is a quick and easy side dish. Zucchini fries can be a nice low-carb substitute to potato fries. Zucchini tends to be very soft and soggy when cooked on a medium heat so in order to make it crispy it has to be seared on a very hot surface. When searing, mix the oil and spices with the food before adding it to the hot pan, if you place them on a hot surface separately they will burn immediately.  When making this dish make sure that your cooking fan is on or the windows are open, otherwise the smoke created when the zucchini touches the hot pan will trigger the smoke detector. It happened to me several times.  

Preparation and cooking time: 30 minutes
Serves: 6 people


4 big zucchinis
¼ cup oil
3 tbsp white vinegar
1 tbsp granulated garlic
2 tbsp Italian seasoning or dry dill
¼ tsp ground cumin
¼ tsp cayenne pepper (optional)
salt and pepper to taste.


Place a clean wide pan on high heat for 5 minutes.
Cut zucchini into 1” thick cubes.

In a big bowl mix zucchini with oil, vinegar and spices.

Place half of the content in the hot pan, let sear for 5-7 minutes.

Flip the zucchini and let cook for another 5-7 minutes. 

Repeat with the second batch.
