One of my favorite treats is Hail Merry’s Blonde Macaroons. I usually make sure that I have them in stock in my pantry, but last week I was out of them just when I was craving to have one. Since I did not feel like leaving the house to buy them, I decided to try and recreate my own version of them in my kitchen. Thankfully I had all the ingredients I needed for that. The results were addictive.
Prep time: 10 minutes
Yields: 9 small balls
½ cup shredded coconut
½ cup sliced almonds
3 tbsp maple syrup
2 tbsp coconut oil
1 tbsp vanilla extract
pinch of salt
Put all ingredients in a food processor (I used the mini one).
Pulse several times until all ingredients are combined together.
Create 1” diameter balls, place on a flat plate and let cool and harden in the fridge.
