Chicken Pasta Salad


This is an easy and quick, flavorful and refreshing pasta salad, perfect for spring and summer.  It tastes even better the next day (if you can hold yourself to not finish it all in one day).
  
Preparation time: 30 minutes
Serves: 4 people.

Salad ingredients:

1.5 lb/700gr Chicken breast (about 2 big pieces)
2 cups dry short pasta
1 cup chopped herbs of your choice (parsley, dill, green onion)
1 cup chopped roasted red pepper

Sauce ingredients:

2 tbsp white vinegar
2 tbsp olive oil
2 tbsp mayonnaise
2 tbsp Dijon mustard
½ tsp minced garlic
salt and pepper


Preparation:

Cut chicken in to cubes. Cook in water with salt for 10-12 minutes.


Remove from boiling water, rinse under cold water to stop cooking. Place in a bowl.
Place pasta in the chicken boiling water and cook for 6-8 minutes. 


Rinse with cold water and place in the bawl with the chicken.
Add herbs and roasted red pepper and mix together. 


In a separate bowl mix all the sauce ingredients together. 


Add sauce to the salad bawl and mix.

Serve on a bed of green leaves of your choice.
