Quick Quinoa Bread




Here is a very fast and easy recipe for gluten free, heavy and dense, bread. The dark color of the bread comes from the red quinoa flour I have used. If you use white quinoa flour you will receive a much lighter bread color. I grind my own flour at home using my Vitamix Dry Grain Container. You can find quinoa flour at almost any grocery, in the health food section.

Serving recommendation: toast a slice, spread butter on it and sprinkle some salt. Great on the side next to a salad.


Prep time: 5 minutes
Baking time:25-30 minutes

Ingredients:

2 cups quinoa flour
1 tsp baking powder
½ tsp salt
¾ cup water
½ cup olive oil
2 eggs

Preperation:

Preheat the oven to 350F/180C

Mix all ingredients. 



Place in a greased English Cake pan. Use a fork to spread it evenly.


Bake for 25-30 minutes.


Let cool.
Refrigerate to prolong freshness
