Coleslaw Salad with Onion Seeds



For me, Coleslaw salad is a comfort food.  For many years I have completely forgotten about this salad; that was until this Passover – when my father made it for the holiday and I just couldn’t stop eating it. When I was recreating the salad in my own kitchen I decided to add onion seeds. I love the pop of color and the warmth the flavor and aroma of the onion seeds add to the coolness of the cabbage.

Preparation time: 15 minutes

Ingredients:

1lb/500gr shredded cabbage
1 cup shredded carrot
1 cup chopped scallions (about 7)
Juice of 1 lemon
¾ cup mayonnaise
2 tsp onion seeds
salt and pepper

Preparation:

Mix together veggies, lemon juice, mayonnaise, and salt and pepper.


In a small pan, toast onion seeds for a minute or two on high heat. Mix constantly. Let cool.


Add onion seeds to the salad and mix. 



Keep refrigerated.
