Orange Cake with Chocolate Sauce: No Grain, No Sugar, No Dairy

This recipe is for those of you who think that orange and chocolate go together well. I’m quite aware that some of you don’t like this combination. In this is case, you can substitute the orange zest with lemon zest, and instead of the orange puree use ¼ cup of coconut cream.  My brother in law, after trying this cake, mentioned how retro the flavor is. I was not aware that some flavors are linked to different periods of time, but I know that various foods and tastes can bring up old memories.  So, if you choose to make this cake, make it a good experience for the people around you.

Cake ingredients:

2 cups almond flour
½ cup Xylitol
1 tsp baking powder
1 orange (zest and ½ of the fruit)
3 eggs
1 tbsp vanilla extract

Chocolate coating Ingredients:

¼ cup cocoa powder
¼ cup Xylitol
¼ cup water
1 tbsp vanilla extract
1 tbsp coconut oil
25gr/1oz dark chocolate

Cake preparation:

Preheat oven to 150C/300F

Mix together almond flour, Xylitol, baking powder, and orange zest. 

Add vanilla extract and eggs and mix.

Make a puree of ½ of the orange in a mixer or a food processor. 

Add orange puree to the cake batter and mix. 

Pour batter into a well greased medium pan (7X11in/17.5X28cm)

Bake for 35-40 minutes, or until the top of the cake is firm against your pressing fingers.

Chocolate sauce preparation:

Aside from the dark chocolate – place all chocolate sauce ingredients in a small saucepan. 

Cook on a medium heat while whisking constantly. 

When mixture comes to a boil, turn off the heat and add the chocolate. 

Whisk constantly until the chocolate is completely melted and you have a smooth chocolate sauce. 

Pour sauce on top of the cake and spread it evenly over the cake by using the back of a spoon or a spreading knife. Let cool.
