Recycle in the kitchen. When you make Slow Roasted Chicken don’t throw away the liquid at the bottom of the pan. It is rich with flavor and you can use it in another dish – like this spinach recipe. If you are vegetarian – simply replace the liquid with vegetable stock and add the spices that that you like. For this recipe I recommend buying frozen spinach in a plastic bag (like Trader Joe’s) rather than in a box. It’s a lot easier to cook evenly. If the bag feels like a solid stone, use a dough roller to break it in to small pieces while packed, before adding it to the pan.
Cooking time: 20 minutes
1lb/ ½ kilo frozen spinach
2 leaks - chopped
¾ cup Slow Roasted Chicken liquid
3 tbsp roasted sunflower seeds (optional)
2 tbsp oil
Salt and pepper
In a wide pan that has a lid, sauté leaks with oil, salt, and pepper on medium high for 2 minutes.
Add frozen spinach. Mix well. Cover and let cook for 5 minutes.
Add chicken liquid to the spinach. Mix well. Cover with the lid and let cook for 10 minutes.
Sprinkle sunflower seeds before serving.
