Crunchy Chocolate Balls with Dates



As children, one of our favorite treats was the chocolate balls our mother made from crushed graham crackers and chocolate syrup. In this recipe I’ve decided to recreate those balls by using all natural and gluten free ingredients. 

Ingredients:

1 lb/ ½ kg pitted Medjool dates
2 cups chopped walnuts (raw or roasted)
4oz/100gr 100% dark chocolate
¾ cup shredded coconut
1 tbsp vanilla extract
¼ cup water

Preparation:
Place pitted dates in a food processor. Mix until receiving a thick paste.


In a small saucer on low heat melt chocolate with water and vanilla extract.


In a big bowl mix date paste with the melted chocolate.  


Add nuts and mix.


Create balls in your desired size.
 
Roll balls in shredded coconut. The smaller the balls the more shredded coconut you will need.


Store in the refrigerator.
