Mediterranean Salad



This salad is ideal for lunch on hot summer days, when you don’t want to cook anything or consume warm food. It’s very nourishing and satisfying.

1 serving

Ingredients:

1 hard-boiled egg
1 cup chopped greens (your choice of greens)
½ small avocado cut into cubes
1/3 cup chopped cucumber
¼ cup halved grape tomatoes (about 8)
¼ cup chopped scallion (about 1)
¼ cups shredded carrot
¼ cup feta cheese
¼ cup halved pitted Kalamata olives (about 8-10)
2 tbsp olive oil
1 tsp lemon juice
Salt and pepper

Preparation:



Mix vegetables with oil, lemon juice, and salt and pepper.

Sprinkle feta cheese on top.

Cut egg in to four slices and place on the salad.
