Chia Seed Porridge



If you are in the mood for something healthy, nourishing, and satisfying that is easy to make - try this porridge. It’s like cream of wheat but it’s packed with nutrients and health benefits: It’s gluten fee, vegan, and raw. The chia seeds are full of fiber, omega 3, antioxidants, and they help to regulate your hormones. You can eat it cold, at room temperature, or warm. If you decide to warm it up make sure not to over heat it otherwise you will ruin the omega 3 oil. The dish itself is very quick to make, but it needs to rest for 1 hour to allow the chia seeds to thicken the almond milk. If you want to have it for breakfast you can prepare it the night before.


Ingredients for 1 serving:

1 cup almond milk (8oz/250ml)
3 tbsp ground chia seeds
1 tbsp ground flax seeds
2 tbsp Xylitol (or your choice of a sweetener)
½ tsp vanilla extract
¼ tbsp ground cardamom (optional)

Optional topping:

¼ cup fresh blueberries/chopped walnuts


Preparation:
 
Mix all ingredients. 



Let rest in the refrigerator for at least an hour before serving.
