GF Chocolate Brownies

There are those conversations that inspire you to do something new, something different. This recipe was born thanks to a phone conversation with my youngest sister Sapir. I don’t remember how it came about, but our conversation ended with Sapir challenging me to develop a chocolate cake recipe that she would love and find easy to make; a recipe that also fits my restrictive diet of no grain and no sugar.  Challenged accepted. After a few experiments (delicious, I might say, but not yet perfect) and some tweaking, I’m very happy to share with you my new GF Chocolate Brownies recipe. Now it’s one of my favorite treats. It’s moist, rich, very chocolaty, and very satisfying. And the best part of it – it’s very easy to make.


1 stick butter (4oz/113gr)
100gr/3.5oz Dark chocolate
1 cup xylitol/sugar
1 cup milk (dairy or plant base)
1/3 cup cocoa powder
1 tbsp vanilla extract
1 tbsp instant coffee  (optional)
2 cups almond flour
½ tsp baking soda
2 eggs


Preheat oven to 300F/150C

In a medium size pot on medium heat cook together – butter, chocolate, cocoa powder, xylitol/sugar, vanilla extract, and coffee.

Mix constantly. Stop cooking when you have a smooth chocolate sauce.

In a big bowl mix together almond flour and baking soda.

Add chocolate sauce and mix well.

Add eggs and mix until you have a smooth batter.

Place batter into a well-greased medium size pan (7X11in/17.5X28cm)

Bake for 30-35 minutes.
