GF Jumbo Cheese Blintz

Some of you might remember my Shakshuka Breakfast Burrito recipe. I’ve decided to take the savory pancake recipe and turn it into something sweet. This cheese blintz is a big dish, but it is so delicious that I doubt you’ll want to share it with anyone. I for sure don’t. You can serve it with some fresh strawberries and blueberries to make it more colorful and nourishing.  This is a great breakfast/brunch recipe for whenever you want to treat yourself or someone else with something special, tasty, and very satisfying.  

Serves: 1 (for more servings, multiple quantities by the number of servings you want)
Total preparation time: 15 minutes.

Blini (flat pancake) ingredients:

¼ cup almond flour
¼ cup tapioca flour
¼ cup milk (dairy or plant base – i.e. coconut, almond, etc)
1 egg
1 tbsp sugar or coconut sugar
½ tsp vanilla extract
1 tbsp butter for frying.

Cheese filling ingredients:

½ cup ricotta cheese
1 tbsp sugar or coconut sugar
½ tsp vanilla extract

Topping ingredients:

1 tbsp sugar/xylitol powder


Use medium heat to melt butter in a large pan.

Mix together all the rest of the blini ingredients.

Pour batter onto pan and spread it evenly. 

Increase heat to high. Fry for about 2 minutes on each side.

Mix together all cheese filling ingredients. 

Place it at the center of the blini. 

Fold blini: first two parallel sides, then the top and bottom sides. 

Place it on a serving plate, folded-part face down.

Dust with sugar/xylitol powder before serving.
